Slow Cooker Creamy Tortellini and Sausage Soup

Yield: 12 servings | Prep: 20 min | Cook: 4 hrs
Ingredients:
1 Tbsp olive oil
1.5 lbs sweet Italian sausage, casing removed
2 cups sweet onion, diced
1.5 cups carrots, diced
1/2 cup celery, diced
1 Tbsp garlic, minced
1.5 quarts chicken or vegetable stock
3 cups heavy cream
4 oz cream cheese
1 – 14.5 oz can diced tomatoes
3/4 lb dry cheese tortellini
4 oz baby spinach
1 tsp kosher salt
1/2 tsp white pepper
1/2 tsp dried basil
1/2 tsp dried oregano
Instructions:
Heat olive oil in a skillet and brown sausage. Remove and set aside.
Sauté onion, carrots, celery, and garlic until softened.
Add stock, cream, cream cheese, and diced tomatoes. Stir until combined.
Add tortellini, spinach, and cooked sausage. Cook until tortellini is tender.
Season with salt, pepper, basil, and oregano. Serve warm.

Beef Vegetable Soup
“This was my grandma’s recipe, so I’ve been eating this my whole life! It’s easy to put together with minimal effort and low cost.”
Ingredients:
1.5–2 lbs chuck roast, cubed
3 ribs celery, sliced
3 large carrots, sliced
1 large onion, diced
1 cup white or red wine (optional)
1 – 28 oz can whole peeled tomatoes
1 – 15 oz can green beans (low sodium optional)
1 – 15 oz can wax beans (low sodium optional)
1 – 15 oz can sweet corn (low sodium optional)
2 Tbsp tomato paste
1 – 32 oz box beef bone broth
1 bay leaf
Salt & pepper
Instructions:
Brown the chuck roast in a stock pot, seasoning as you cook. Remove and set aside.
In the same pot, sauté onion, celery, and carrots until onions are cooked through; slightly brown for added flavor. Season veggies.
Add wine (if using) and scrape browned bits from the pot.
Add all canned vegetables (juice included), browned meat, tomato paste, beef broth, and bay leaf. Break up whole tomatoes by hand. Add water if too dense.
Simmer partially covered for 2–3 hours (longer for deeper flavor), adding water as needed.
Optional: Make a day ahead—the flavors intensify overnight in the fridge!

Zuppa Toscano

Ingredients (Serves 8):
6 oz bacon, chopped
1 lb hot Italian sausage
1 head garlic (10 cloves), minced
1 medium onion, finely diced
6 cups chicken broth
4 cups water
5 medium russet potatoes, peeled & chopped
1 bundle kale, chopped (~6 cups)
1 cup whipping cream (or full-fat coconut milk)
Salt & pepper, to taste
Parmesan cheese, optional
Instructions:
Brown bacon in a large pot until crispy. Remove and leave 1 Tbsp oil.
Brown Italian sausage, remove and set aside.
Sauté onion until soft and golden; add garlic and cook 1 minute.
Add broth and water; bring to boil. Add potatoes and cook 13–14 minutes.
Stir in kale and cooked sausage; bring to light boil.
Add cream, season with salt & pepper, remove from heat, and serve garnished with bacon and Parmesan.
